Ingredients

- 3 tablespoons unsalted butter
- 1 (10 oz) bag of mini marshmallows
- 6 cups Rice Krispies cereal (or any crispy rice cereal)
- 2 to 3 cups vanilla ice cream (or any flavor you love)
Optional Add-ins:
- Chocolate chips
- Rainbow sprinkles
- Crushed Oreos or freeze-dried strawberries
Instructions
- Melt butter over low heat in a large saucepan.
- Add marshmallows and stir until smooth.
- Remove from heat and fold in cereal until fully coated.
- Divide and press into two flat 9×13″ sheets on parchment paper.
- Freeze layers 10 minutes to firm up.
- Spread softened ice cream on one layer.
- Top with the second layer and press gently.
- Freeze for 2–3 hours until firm.
- Slice into bars and serve immediately!
Notes
Use flavored cereal or colored marshmallows for a fun twist. Works great with cookie dough, strawberry, or even chocolate mint ice cream.
