Ingredients

  • 3 tablespoons unsalted butter
  • 1 (10 oz) bag of mini marshmallows
  • 6 cups Rice Krispies cereal (or any crispy rice cereal)
  • 2 to 3 cups vanilla ice cream (or any flavor you love)

Optional Add-ins:

  • Chocolate chips
  • Rainbow sprinkles
  • Crushed Oreos or freeze-dried strawberries

Instructions

  1. Melt butter over low heat in a large saucepan.
  2.  Add marshmallows and stir until smooth.
  3.  Remove from heat and fold in cereal until fully coated.
  4.  Divide and press into two flat 9×13″ sheets on parchment paper.
  5.  Freeze layers 10 minutes to firm up.
  6.  Spread softened ice cream on one layer.
  7.  Top with the second layer and press gently.
  8.  Freeze for 2–3 hours until firm.
  9.  Slice into bars and serve immediately!

Notes

Use flavored cereal or colored marshmallows for a fun twist. Works great with cookie dough, strawberry, or even chocolate mint ice cream.
