A soft, fluffy sponge cake layered with whipped cream and topped with strawberries, inspired by the Jellycat birthday cake plush. Cute, easy, and perfect for celebrations!

Ingredients

For the sponge cake:

  • 5 large eggs

  • 150g sugar

  • 150g flour

  • 1 tsp vanilla extract

  • 1/4 tsp salt

For whipped cream:

  • 300ml cold heavy cream

  • 3 tbsp powdered sugar

  • 1 tsp vanilla extract

Decoration:

  • Fresh strawberries

  • Chocolate chips or melted chocolate (eyes + smile)

  • One birthday candle

  • Optional: pink frosting, marshmallows

Instructions

  1. Preheat oven to 340°F (170°C). Line and grease two 6-inch pans.

  2. Beat eggs and sugar until thick and pale. Add vanilla.

  3. Gently fold in sifted flour and salt.

  4. Bake 25 min, let cool.

  5. Whip cream with sugar and vanilla until stiff.

  6. Assemble layers with cream and strawberries.

  7. Draw the face, add candle, and enjoy!

Notes

This cake is best served the same day but can be stored in the fridge for up to 2 days. Assemble the day of for maximum freshness. Add strawberries and decorations just before serving.
